Cut the potatoes into slices and put them inside

Directions:

Preheat the oven to 375°F (190°C). Grease a baking dish.
In a bowl, toss the potato slices with olive oil, salt, and pepper until evenly coated.
Arrange a layer of potato slices in the bottom of the baking dish.
In a small bowl, mix together the shredded cheddar cheese, grated Parmesan cheese, chopped parsley, garlic powder, and dried thyme.
Sprinkle a portion of the cheese and herb mixture over the potato layer.
Continue layering potato slices and cheese mixture until all the potatoes are used, finishing with a layer of the cheese mixture on top.
Drizzle the heavy cream evenly over the top of the layered potatoes.
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
In the last few minutes of baking, brush the melted butter over the top for added flavor and browning.
