Crispy eggplants: the recipe for an original and savory meal

1. Peel eggplants and cut them the the lower part so that you get some stripes at the end.
2. Soak them in salted water, bring to a boil and cook for 2 minutes.
3. Let cool.
4. Aside whisk eggs with salt, pepper, paprika and mustard.
5. Then make the breading with breadcrumbs, salt, pepper, dried oregano and paprika.
6. Coat the eggplants in breading and then in the eggs mixture.
7. Fry in hot oil until golden.
