CAKE WITH PANNA COTTA AND STRAWBERRIES

Directions: For the Panna Cotta Layer: a. In a small bowl, sprinkle the unflavored gelatin over cold water. Let it sit for 5 minutes to bloom.
b. In a saucepan, heat the heavy cream, whole milk, granulated sugar, and vanilla extract over medium heat. Stir until the sugar is dissolved and the mixture is hot but not boiling.

c. Remove the saucepan from the heat and add the bloomed gelatin. Stir until the gelatin is completely dissolved.

d. Pour the panna cotta mixture into a 9-inch springform pan. Refrigerate it for at least 4 hours or until set.

For the Cake Layer: a. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

b. In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.

c. In a separate bowl, cream the softened unsalted butter and granulated sugar until light and fluffy.

d. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

e. Gradually add the dry flour mixture to the wet ingredients, alternating with the whole milk. Begin and end with the dry ingredients, and mix until just combined.

f. Pour the cake batter into the prepared cake pan, spreading it evenly.

g. Bake the cake in the preheated oven for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.

h. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

For the Strawberry Topping: a. In a mixing bowl, combine the sliced fresh strawberries, granulated sugar, and lemon juice. Toss gently until the strawberries are coated.

b. Let the strawberry mixture sit at room temperature for about 10 minutes to allow the flavors to meld.

Assembling the Panna Cotta Cake with Strawberries: a. Once the panna cotta layer is set, carefully remove it from the springform pan and place it on a serving platter.

b. Place the fully cooled cake layer on top of the panna cotta layer.

c. Spread the strawberry topping over the cake layer, ensuring an even distribution.

d. For a decorative touch, garnish the cake with additional fresh strawberries.
