Ingredients

For the Crust and Topping:

• Pinch of salt
• 1 ½ cups all-purpose flour
• ¾ cup cold butter, cubed
• ½ cup sugar

For the Filling:

• 2 large eggs
• ½ cup flour
• 1 cup sugar
• 16 oz can crushed pineapple
• ½ cup sour cream

For the Icing:

• 1 teaspoon coconut extract
• 1 cup powdered sugar
• 2 tablespoons half and half
